Food that's so good it tastes bad for you!
Prawn, Mango and Avo Salad – serves 4
180g vermicelli noodles
1 kg large cooked prawns
Soft lettuce leaves shredded
2 medium mangoes cut into small squares
2 medium avocados, cut into small squares
½ red onion, finely diced
Dressing:
¼ cup sweet chilli sauce
1/3 cup lime juice
¼ cup olive oil
2 small cloves garlic
Salt and pepper
Chopped coriander
Soak vermicelli noodles in freshly boiled water, drain and cool
Place dressing ingredients (aside from the coriander) in a jug and whisk well. Stir through the coriander
Place avocado and mango in bowl and drizzle over 1 or 2 tablespoons of dressing, toss gently.
Place shredded lettuce on serving plate and top with noodles. Spoon mango, avocado salsa over and top with prawns. Sprinkle red onion over and drizzle the remaining dressing.
Coucous, Orange and Spinach Salad
2 cups vegetable stock
2 cups couscous
80gr butter
1 bunch English spinach
1 medium red capsicum
¾ cup pitted dates, chopped
3 medium oranges, segments
3 green shallots, chopped
1 cup unsalted, roasted cashews
Dressing:
2 tablespoons white wine vinegar
2 teaspoons balsamic vinegar
1 teaspoon grated orange rind
1/3 cup orange juice
Add stock to pan, bring to boil, stir in couscous, remove from heat and stand 3 minutes. Add butter, stir over heat until butter melts, then stand a further 3 minutes
Microwave spinach until just wilted, rinse under cold water, drain on absorbent paper.
Quarter capsicum, remove seeds, grill skinside up until skin blisters and blackens, Peel skin away and chop.
Combine all ingredients, add orange dressing and mix well.
